Simple Spinach Salad with Long Sweet Pepper
For 1 person (1 bowl)
2/3 tablespoons of Long Sweet Pepper (Cubanelle or Cuban Pepper)
1 cup of Spinach
1 tablespoon of Olive Oil
1 tablespoon of Cottage Cheese
Take the spinach, its basically handful, and wash it, then cut it in thin slices and put it in a soup bowl, cut the Long Sweet Pepper from the bottom in thin slices (that are round), and put them on top of the Spinach, add the Cottage Cheese and sprinkle with Olive Oil. You can either serve with toasted bread, or Potatos.
