Spinach Salad
For 1 person
1 Handful of Spinach
1 Tablespoon of Lime or Apple Cider
1 Tablesppon of Olive Oil
1 Tablespoon of Pine nuts (or any other nut)
1 Tablespoon of Vegetarian Parmesan or a vegan alternative
Take a handfull of Spinach and wash it underneath a running tab or in a big bowl. Shake off the water. Cut the Spinach (optional) put in a bowl, add the Pine nuts, sprinkle the Olive Oil, the Apple Cider and sprinkle the Parmesan. Serve with Burrito or Bread (optional).
