Potato, Spinach and Sweet Bell Pepper Sabji

For 2 persons

4/5 potatoes

2 cups of Spinach

1 Red Sweet Bell Pepper (Sweet Paprika)

1 tablespoon of Ghee (or Butter and/or Olive Oil)

1 teaspoon of Asafetida (optional (and do not put on ekadasi!)

1 teaspoon of Curcuma (Turmeric) powder (or crushed when fresh)

1 teaspoon of Coriander Powder

1 teaspoon of Cumin Powder

1/3 of a whole Nutmeg - grated or crushed

1/2 to 1 cup of Water

1 teaspoon of Sea-salt

Heat up the Ghee or Oil in a pan, peel the potatoes, and chop in cubes, fry them until golden brown. Take the Spinach in your hand and wash it under the tap. Chop the spinach in small strips, add the spices (start with the Asefetida), and fry for 1 minute. Chop the Sweet Paprika from bottom till top, small slices, and add them and fry for 1 minute. Add the Spinach and fry for 2 minutes. Add the Water and bring to a boil. Close the pan with a lid and boil for 15/20 minutes on low heat. Add the Sea-salt before serving.

Serve with Rice or Bread.
