Pasta with Basil Pesto

For two persons

Ingredients:

500 gram (18 oz) whole wheat bio penne
20/30 leaves of fresh Basil
40/50 leaves of Spinach
5 Tablespoons Good Italian olive oil
5 Tablespoons Old vegetarian cheese or vegan parmesan
3 Tablespoons Pine nuts
1 Teaspoon Sea Salt

Cook the pasta as instructed.
While cooking add 2 teaspoons of Salt and 2 table spoons of Olive Oil. Put the pasta in a skillet (sieve), and add cold water. Add  1 tablespoon of Olive Oil in the pan.


Heat 2 Tablepoons of Olive Oil and bake the pine nuts in a cooking pan.
Add the Spinach and Basil, and cook for two minutes. Let it cool off and add 4 tablespoons of cold water.

Cut the old veggie cheese and add in a mixer with 1/2 teaspoon of sea salt, and mix. 

Add the Basil, the Spinach, Pine nuts, olive oil mixture (you can also add the spinach and basil raw) to the cheese and mix together. 
Add the Pesto to the hot pasta, and mix. Serve hot.
