Pizza Napoletana

For 2 Pizza's

Ingredients

Fresh yeast (or dry yeast)

500 gr. Fine flower

3 gr.  (1teaspoon) Salt

325 ml Good Water

 1 can of Italian Tomatoes

Basil

1 Vegetarian Mozarella

Semolina or breadcrumbs (both are optional, you can also use flower)

Necessities:
- oven
- stone plate (optional)
- bowl
- wet clean cloth
- warm spot

The Sauce

Crush the canned Tomatoes by hand and add half a teaspoon of salt.

The Dough

Take a bowl, put in the lukewarm water, add a little Flower, and add the yeast and mix. Put the rest of the Flower and mix in the salt. Mix with a spoon.

Make a nice ball, the more you knead the better (about 15 minutes), but if you just make a nice ball it's fine. Put the dough ball in a bowl and let it rest for about 30 minutes (the best is to put it in a bowl, cover it (with a warm wet cloth), and put it in a warm spot or in the oven (50 degrees). 

Then knead it again, and rest again for 30 minutes. 
The best is to put it in a covered container for a minimum of 8 hours and a maximum of 24 hours.

The Cooking

Preheat the oven grill (below and on top). If you have an oven preheat on the highest number.

Now make the ball into a pizza, put a little flour on a surface or directly on an oven tray (best to cover the oven tray with parchment paper), and put the dough ball, now just move the dough to the outside, starting in the middle, not touching the edges. When it's round, add the crushed Tomatoes, and add Olive Oil.

Now put it in the oven at the bottom, with both grills on 220 degrees Celsius (430 F), for about 15 minutes.  

Cut the Mozarella, and add. And take your cheese and put it in the mixer, add half a teaspoon of Salt, and mix (now you have Vegetarian Parmesan). Add the Vegetarian Parmesan. Cook for about 2 more minutes.

Take it out of the oven and put it on a cutting board, (add the Parmesan, if you did not put it before cooking) add the Fresh Basil, and add a little Olive Oil.
Cut 4 pieces with a Pizza cutter wheel. Start from the middle and cut. Serve immediately.
