Baked Eggplant with Kurkuma

 For 2 Persons

1 Eggplant

1 tablespoon Kurkuma

1 teaspoon Sea Salt

1 teaspoon Cayenne Pepper (optional)

1 Tablespoon of Oliveoil or Sunflower Oil

Cut the Eggplant in thin slices, about 0.5 cm (0.2 inches), or even thinner. Heat the oil in a baking pan, and add the slices. Bake one side, it will absorb a lot of oil. Bake the other side, add a little oil if necessary.

Turn around again, and bake them until black. Take them out of the pan into a bowl, and add some Tumeric powder, and salt on bothe sides. You can also add some Cayenne Pepper if you like spicey.

Repeat with the rest of the slices.

Serve with bread, and/or potatoes and vegetables.
