Uova Picante Purgatorio (Spicy Eggs in Purgatory)
For 1 person
3 tomatoes (preferably Roma Tomatoes)
1 teaspoon Cayenne Pepper
1 teaspoon Sea Salt
1 teaspoons Black Ground Pepper
1 hand full Fresh Basil (if there is no Fresh Basil around use 1 teaspoon dried Basil and or dried Oregano)
1 tablespoon Tomato Paste (I buy Tomato paste in a tube)
1 teaspoon Fresh Lemon Juice
4 Tablespoons of Cream Cheese (like Philadelphia)
1 teaspoon Black Salt
1 tablespoon Olive Oil
Chop the Tomatoes in small pieces. Heat the Olive Oil in a Baking Pan, and add the Tomatoes. Add the Spices, Lemon Juice and Tomato paste, and fry for 12 minutes.
Put it in a plate, and add four scoops of Cream Cheese, in four places, and add the Black Salt on the Cream Cheese, and drizzle the Cheese (a few drops) with Olive Oil. Add some Fresh Basil Leaves.
Serve with Toasted Whole Wheat Bread, or simply Toasted Brown bread (my preference).
