Artichokes
(Here is: The traditional Artichoke recipe)
For 2 persons
6 mini Artichokes
3 Artichokes
1 liter Sunflower oil
3 Tablespoons Olive Oil
2 Lemons
3 tablespoons Pine nuts
1 cup of red grape vinegar
1 table spoon Black Ground Pepper
1 table spoon Sea Salt
1/2 cup of Vegetarian Parmesan
1 liter (1/4 gallon) water
Peel the mini artichokes, until you see the soft part. You can include a little bit from the stem as well.
Now put them in water, mixed with the half a cup of red grape vinegar, and the juice of 1 lemon.
Let it rest for a while (30 minutes to 24 hours).
Now squeeze out the water with your hands, and fry them.
Now fry the baby Artichokes, in hot oil.
Now clean the big artichokes. Ofcourse its easier to clean them after cooking, but this recipes peels them before cooking. Cut out the heart. You can cut the heart in bitesized pieces. Now cook for about 20 minutes in 1/2 cup of vinegar, 1 lemon and water.
After that bake them in a pan with olive oil, or bake in the oven.
Bake the pine nuts in a baking pan.
Now add the pine nuts with the baked Artichokes hearts. And add citronette (vinegar, fresh lemon juice, fresh ground black pepper and sea salt).
Serve on a plate sprinkled with the vegetarian Parmesan Cheese. And sprinkle with the fried baby Artichokes.
You can serve with toasted bread, with olive oil, salt and asafetida (optional).
