Vegan Pâté

 For 4 persons

3 cups (250 gram) Chickpeas

1 Tablespoon Oregano

4 Tablespoons Olive Oil

Half a Lemon

1 Teaspoon Cayenne

1 Teaspoons Ground Black Pepper

2 Teaspoons Sea Salt (1 for boiling and 1 for the Pâté)

1 Teaspoons Nutmeg

1 Tablespoon peanut butter or 1 Tablespoon of Sunflower Pits

5 Tablespoons of Green Olives

1 Potato

1 Carrot

1 Tablespoon Passata or Tomato paste

1 Tablespoon of Fresh Finely Cut Parsley (optional)

Wash the Chickpeas and boil for 5 minutes (or leave them in water over night), and leave them for 1 hour. Then add 1 teaspoon of salt and cook them for 1 hour. Throw away the water and let them cool off.

Cook the Carrot and Potato for 20 minutes.

Mix all the ingredients together and put in a blender.

Put in a bowl.

Serve with Whole Wheat Brown Toasted Bread; cut in half pointed slices and Fresh Parsley.
