Seared Chili Panir Steaks (Paneer Steaks)
Necessities:
-gas cooker
-big pan for milk
-frying pan or (aluminium) oven plate for searing panir,
-cheese cloth or colander
Ingredients for 2 persons:
- +/- 1 liter of full fat milk
- +/-1/2 liter of yoghurt
- +/- 2 table spoons of olive oil or sunflower oil
- +/- 1/2 teaspoon yellow asafoetida powder
- +/- 2 tablespoons of sweet soya sauce
- +/- 2 tablespoons of sweet chili sauce or curry ketchup.
Make panir by boiling milk in a pan, add yoghurt until it curds (stir the milk), and save the cheese in a colander or cheese cloth. Make sure to drain the water (whey) from the cheese as we are making cheese or panir steaks.
Then put the cheese on a big plate, serving plate or oven plate and put another plate on top with something heavy on it, like a pan filled with water, so the panir becomes like a big slap of cheese.
After 10/15 minutes or so, cut the panir in big steak like pieces.
Take a thin frying pan and put in the olive oil, or sunflower oil,
and fry the yellow asafoetida. Then add the Panir Steakes, and fry on both sides until golden brown or crusty. Then add hot chili sauce or curry ketchup, fry it for about 2 minutes, then add the sweet soya sauce and fry for another 2 minutes. Fry or rather, sear - the cheese steaks.
Serve with hot chips (Chili Fries), Mashed Potatoes or simply Boiled Potatoes and Salad (Avocado Salad, Iceberg Salad with Roasted Sunflower Pits etc.).
