Red Cabbage - Carrot salad

For 2 Persons

1/4 Red Cabbage
3/4 Small Carrots
1/4 to 1/2 of Salad
100 Grams of Sunflower nuts (optional)
1/2 Lemon
2 tablespoons of Olive Oil

Squeeze the lemon with a fork, in a bowl and add the Olive Oil and mix.
Cut the salad, cut the carrots in round pieces, and cut the Red Cabbage, in little squares.
Put in the bowl with the dressing and mix.
Optionally bake the nuts in a pan (no oil), and mix in with the salad.
Serve with Courgette/Zucchini soup and crackers or bread.
