Tomato Soup

For 2/3 persons

Ingredients

1/2 Tablespoon of Olive Oil
1 teaspoon of Asafoetida
2 teaspoons of oregano
1 teaspoon of Herbes de Provence (Mixed Herbs)
1 teaspoon of Nutmeg
2/3 Tablespoon of Cane Sugar and/or Brown Sugar
3/4 or 8/9 fresh Tomatoes
2/3 tablespoons Tomato Paste
1 Canned Italian Tomatoes
1 teaspoon of Sea Salt
1/2 teaspoon of fresh Lemon Juice
2/3 tablespoons of cream or 1/2 cup of milk (optional)
2/3 tablespoons of butter (optional)
250ml Pasata (optional)

Cut the tomatoes and open the can
Heat the oil, and fry the Asafoetida, Oregano, Herbs, nutmeg. Add the sugar. Cut the tomatoes, or simply throw them in the mixer. Add the fresh tomatoes, and fry for 1/2 minutes. Add the Tomato Paste.
Add the Canned Tomatoes, salt and lemon juice.

Optional: add the pasata

Cook for about 10/20 minutes and sift through a skillet. You can push it through with a wooden spoon.

Optional: Add the butter, cream and/or milk and reheat.

Serve with fried bread, sliced in 1 cm pieces.
