Simple Tomato Sauce Pasta

Simple pasta for 2 persons

Sauce:
500 gr Italian Pasta
2 tablespoons Italian Olive Oil
1 teaspoon Asafoetida
1 teaspoon of ground Black Pepper
0.5 teaspoon of Cayenne pepper
1 teaspoon of Seasalt
2 Tablespoons of Lemon juice (about half a lemon)
3 Tablespoons of Sugar (Cane Sugar or Brown Sugar)
1 teaspoon of Nutmeg
1 tablespoon of Italian herbs
1 tablespoon of Oregano
3 tablespoons of Tomato paste
1 can of Tomatoes
6 Fresh Tomatoes (Optional)
1 liter of Passata (sifted Italian tomatoes)

Pasta:
1 liter of boiling water
1 tablespoon of Seasalt
2 tablespoons of Italian Olive Oil

Pasta: Add the pasta in the boiling water, add the salt and the Olive Oil, cook as per the package.


Sauce: heat the Olive oil, add the Asafetida, the ground Black Pepper, Cayenne Pepper, Nutmeg, Italian Herbs, Oregano. Fry a bit, add the Sugar and the Lemon. Then add the Tomato paste. After one minute add the Tomato Cubes (fresh and canned), and bring to a boil. Add the Passata, add the Salt, and cook for about 5 minutes.

Now there are two ways to do the next stage:
Method #1: Throw the Pasta in a Skilet and wash with cold water.
Add some Olive Oil in the pan, Asafatida, Black Pepper, Oregano, fry, and add the pasta. Add a little more Olive Oil, and add 6 tablespoons of the liquid part of the Tomato Sauce and mix.
Serve with the Tomato Sauce on top.
Method #2: When the pasta is ready throw out the water but not all. Mix the pasta with the water with the Sauce. You will find that the pasta looks better after a few minutes, when the sauce has become thickened.

Serve with Vegetarian Cheese (optional).
