Pumpkin Soup
For 2 persons
1 small Pumpkin or Butternut Squash
1 teaspoon of Ground Nutmeg
1 teaspoon Ground Black Pepper
1 teaspoon of Sea Salt
3 Tablespoons Olive Oil
1 Litre (0.26 Gallons) of Water
Heat the Olive Oil in a big pan. Wash the Pumkin, and chop it up. Start with a few pieces, and gradually keep adding in the hot Olive Oil. You can also add the Pumpkin Seeds etc. as we will sieve it.
Add the Nutmeg and Pepper, and fry for 5 more minutes. Put the water in a water boiler, and add the boiling water. Add the Salt, and cook for 20 minutes. Mix it with a Immersion Blender (Hand Blender).
Now take two big bowl or pans and a sieve, and sieve the soup. Put it back in the pan.
Serve with Creme Fraiche, Mashed Potato and Salad.
