Bean Salad

For 1 person

 1 Cup of Beans (brown or white) (leave out the beans for Ekadasi)

1 Celery stick

1/2 Carrot

1/4 Sweet Bell Pepper (Sweet Paprika)

1/4 Apple

2 Salad Leafs

1 Tablespoon of Olive Oil

1 Tablespoon of Fresh Lime or Lemon Juice

1 Tablespoon of Fresh Cayenne (Optional)

1 Tablespoon of  Bio/Organic Apple Cider Vinegar (optional)

1 teaspoon of Sea Salt


Soak the beans in water for 8 hours (or boil them for 2 minutes, and let them soak for 1 hour or 1/2 hour then cook for 1 hour), or if they are fresh beans 1/2 or till the beans soak up the water is enough. Boil for about 40 minutes in Salted Water.

Put 1 handfull (half a cup) of the cooked Beans in a bowl. Cut the Celery, Carrot, Apple, Sweet Bell Pepper in small pieces, put in the same bowl and add the Lime Juice, Olive Oil and Apple Cider Vinegar (optional). Mix it, and wash the two Salad Leafs, cut them and add them on top.
