Vegan Mayonnaise

For 300 gram of Mayonaise

For Vegan Mayonnaise you can use Soy Milk, instead of Coffee Cream or even Ordinary Milk.
The secret is the Milk must be on room temperature!!!  And to first add all the ingredients together and then use the mixer.

Ingredients:
100 ml Coffee Milk, Cream, Milk, Oat Milk or Soya Milk, make sure to take them out early,  they must be on room temparure.
200 ml or more Sunflower Oil
1 teaspoon of Salt
2 tablespoons of Fresh Lemon Juice (about 1 Lemon) or 2 teapoons of Apple Cider Vinegar, ALL ingredients, including the lemon, must be on room temperature.

1/4 teaspoon of Kurkuma (for coloring)
1 Teaspoon of Black Salt (optional)
1 Teaspoon of Asafoetida (optional)
1/4 Teaspoon of Cayenne Pepper (optional)
1 Teaspoon of Oregano (optional)

Ideally the Milk and Oil should be on room temperature or at least the same temperature.
Add the Milk, spices, Lemon Juice (or Vinegar) in a bowl and mix together for 30 seconds with an immersion blender (hand held blender).  Now slowly add the Oil, while blending. Just keep adding oil until you have the right thickness. If its too thick in the end you can add some Soya milk.

In a blender it is better too slowly add the oil, while mixing, keep adding oil until you have the right thickness. Be brave, keep putting more oil, I know it looks insane, just add more oil to make it thicker.

If it’s too thin add more oil, go ahead, more oil. I know the recipe says 1 part of milk and 2 parts of oil, but I think its more like 1 part of milk and 3 almost 4 parts of oil or even 5 parts of oil! :o! Add more milk if it's too thick. Blend again until the mayonnaise has the right consistency.

Another way, is to just mix them all together, and if too thin addd more oil.
