French Vegetable Soup
For 2 persons
Ingredients
3 Laurels
10 Small Cauliflower Leaves
1 Cauliflower Stem
2 Cups of Baby Spinach
2 Carrots
1 Zucchini
1 Table Spoon Olive Oil
1 Litre of Boiling Water
Sea Salt from the Island of Pag (Croatia)
Black Ground Pepper (Optional)
Old Vegetarian Cheese (Old Cheddar) (Optional)
Cream Cheese, Crème Fraîche or Yoghurt (Optional)
Cut the Vegetables and Cauliflower Leaves and Laurel Leaves and put the Olive Oil in a big pan and fry for a minute. Add boiling water and boil for 40 minutes to an hour. Then take out the Laurel Leaves and mix with a Blender. Serve hot.
Optional, add some more water to make it more liquid, add the Cream Cheese, the Old Vegetarian Cheese (Old Cheddar) and add extra Salt and Ground Black Pepper.
Note: you can use any vegetables you like, once you blend them it will become a nice green soup.
