Peanut-butter with Salad (Broodje Gezond)

 For 1 person

2 Slices of Rye Bread (or any other whole grain bread)

2/3 Tablespoons of Peanut-butter (Calve or homemade)

2 teaspoons of Sambal Oelek (optional)

1/2 small Cucumber

1/2 Sweet Paprika

2 Handfuls of fresh Spinach

2 1/8 of a Lemon

Take a knife and add the Peanut-butter to the slices of Rey Bread, add the Sambal Oelek (optional), wash the Cucumber and peal and slice the Cucumber, add the slices to the bread, now wash the Sweet Paprika, and slice it from the bottom up, add those slices, now take a handful of Spinach, wash it under the tap and cut it in slices, and add that to one bread and repeat for the other bread. Now add the Lemon. (Always cut the lemon in parts either 1/4 or in this case 1/8.)

Serve with Ginger Rooibos Tea.
